Graduation 2009

Sorry I haven't been around lately. Having a daughter just graduate from high school is very rewarding. We have been trying to get her a job and that is pretty hard in this economy. She hasn't gave up but would like one soon before she starts college. lol

Here are my daughter's prom photos. I haven't been on for awhile for I am very busy with her Graduation. Finally her last day of high school and she graduates on June 12th. 2009. All family has canceled in coming so it will be just me and friends. :(

I am trying a new adventure! I am trying everything to make a living for my daughter and myself. I hope you like these and please give feedback. These take me 1 week to make these. The drying takes the longest.

We have had a gorgeous week-end. The weather was in the 80's on the coast. It was a refreshing days at the beach. So here is vintage looking images.

Dessert- Italian Fruit Trifle

Italian Fruit Trifle
Ingredients:

1 Angel Food cake
6 cups fresh fruit, strawberries, blueberries ,raspberries and blackberries.
10 oz. whipping cream
16 oz. ricotta cheese
6 oz. Grand Marnier or Triple Sec
3/4 cup Sugar, plus 2 tbsp.
Zest of one lemon
Juice of one lemon
1 tsp. vanilla

Instructions:

Clean and slice your fruit, toss with 1/2 cup of sugar and set aside. Slice Angel food cake into small pieces. Whip cream with Vanilla and remaining sugar, fold in Ricotta cheese, lemon zest and juice. Now you are ready to assemble, alternate layers of starting with the cake, cream and then fruit. Lightly drizzle the orange liquor on the cake layer. Be sure to end with the fruit on top. You can serve immediately or refrigerate.
Make sure the ricotta cheese is fresh and soft. Otherwise stir it for awhile to get creamy. I also use the sugar to sweeten to your taste. You can have store bought Angel Food Cake or make your own.
